An evening of bold flavors and culinary star power awaits at Amara at Paraiso. Three acclaimed chefs — Michael Schwartz, Gabrielle Hamilton, and Gastón Yelicich — come together for a one-night-only collaboration that celebrates creativity, craftsmanship, and global inspiration.
Michael Schwartz, James Beard Award-winning chef and owner of Miami’s beloved Michael’s Genuine Food & Drink, is credited with pioneering farm-to-table dining in South Florida through his ingredient-driven, honest approach to cooking. Gabrielle Hamilton, James Beard Award winner and New York Times bestselling author of Blood, Bones & Butter, is the chef-owner of New York’s acclaimed Prune, known for her soulful, genre-defying cuisine and celebrated storytelling. Joining them is Gastón Yelicich, one of Uruguay’s most influential chefs and restaurateurs, whose acclaimed Parador La Huella has been named among the World’s 50 Best Restaurants for its refined yet approachable take on coastal cooking.
At Amara at Paraiso, overlooking Biscayne Bay, this powerhouse trio will present a menu that blends their distinct perspectives into an unforgettable progression of flavors. Expect ingredient-driven dishes that reflect Schwartz’s Miami roots, soulful and inventive creations from Hamilton, and the coastal elegance Yelicich has made famous in Punta del Este. This dinner is more than a meal — it’s a rare chance to experience three culinary visionaries at the height of their craft in one extraordinary setting.

100% of net proceeds from the Festival benefit students of the Chaplin School of Hospitality & Tourism Management at Florida International University who assist Festival organizers in all aspects, including Festival planning, logistics and overall execution.
